Breakfast is one of the most important meals of the day!� Did you know you should eat something within 30 minutes of getting up.� That is your body’s clue that you are up and it should come out of sleep mode.� This is especially important for diabetics.� So gather your family around the breakfast table this weekend and enjoy some delicious waffles.� These are also great for breakfast when you have overnight guests.� Weekend Waffles, and Healthier Waffles, are both excellent choices.� You can also whip these breakfast treats out quickly and easily for breakfast on school days.� Send your kids off to school knowing they have had a healthy and tasty breakfast!

HEALTHIER WAFFLES
1 1/4 cup all-purpose flour
1/2 cup whole-wheat flour
1 tbsp baking powder
1/4 tsp salt
2 eggs, separated
1 3/4 cups fat-free milk
1/4 cup canola oil
1/4 cup unsweetened applesauce

In a large mixing bowl, combine the flours, baking powder, and salt.

In a small bowl, using a wire whisk, whisk the egg yolks, milk, canola oil and applesauce. Stir mixture into the flour mixture just until moistened.

In a second small bowl, beat the egg whites until stiff peaks form. Fold the whites into the batter.

Cook on waffle iron according to the manufacturer’s directions.

Serve with a light syrup or with fresh fruit.

WEEKEND WAFFLES
1 1/2 cups all-purpose flour
1/2 cup soy flour
1 1/2 tbsp ground cinnamon
2 1/2 tsp baking powder
1/2 tsp salt
2 cups low-fat milk
1/4 cup canola oil
2 large egg yolks
2 large egg whites
dash of sugar
nonstick cooking spray
1 1/2 cups maple syrup
Fresh fruit, optional

Lightly spoon the flours into dry measuring cups; level with a knife. Combine the flours, cinnamon, baking powder, and salt in a large bowl; stir with a whisk. Combine the milk, oil, and egg yolks; add to the flour mixture, stirring until smooth.

Place the egg whites in a large bowl, and beat with a mixer at high speed until foamy. Add the sugar, beating until soft peaks form. Fold the egg whites into the batter.

Coat waffle iron with the nonstick cooking spray; preheat. When hot, spoon 1/3 cup batter per 4-inch waffle onto the iron. Spread batter to the edges. Cook until the steaming stops; 5 to 6 minutes. Repeat with remaining batter.

Serve with syrup and fresh fruit, if desired.

Yield: 8 servings of two waffles.

Gauche Villa, at 704 Esplanade Avenue at the corner of Royal Avenue, is an Italianate mansion built by James Freret for crockery merchant John Gauche in 1856. Gauche tore down an earlier house to built this one, at a cost of ,000, in Creole taste. Richard Koch restored the house for Matilda Geddings Gray after her 1937 purchase, and her niece, Mrs. Harold Stream, had Koch and Wilson do further work in 1969.

The chaste granite portico is unusual for New Orleans. The simplicity of the large masonry cube with its even articulation transfers emphasis to the iron balcony, cast in Saarbrucken, Germany, with its bracketed cresting and to the cast iron fence. The beautiful ironwork, most of which was added as an afterthought, is uniquely integral to the house's appearance. Numerous patterns are used, casting lovely shadows on the stucco exterior on sunny days. Rows of anthema and other Greek floral motifs decorate the edge of the roof and fence posts.

If you are looking to improve your golf game and not your pocket book, you will go down to your nearest Country Club and talk to you Club Pro. He will tell you how your game has advanced and give you the best advice on what equipment you should be using. Golf is too much of an individual sport to take helter skeltrer suggestions.
